Super Greens Pancakes Recipe
Serves 4
Cook and Prep Time: Approximately 25 minutes
Ingredients
- 1 bunch of watercress
- Punnet of mixed cherry tomatoes
- Punnet of qukes (baby cucumbers)
- 100g of sunflower seeds, lightly toasted
- 1 ripe avocado, halved and sliced
- Greek yoghurt, to serve
- 4 limes, halved
- 150g baby spinach
- 1 bunch of coriander
- 1 cup of SR flour
- 1 cup of light milk (any milk will work)
- 1 large egg
- Salt & Pepper
- Olive Oil
- Chilli oil or hot sauce of your choice
Tools and Utensils
Method
1. In the Quick Mix Stick Blender, drop your egg, flour, milk and spinach and blitz. Season with salt & pepper
2. Place your Green Stone® Frypan over a medium heat and coat evenly with a little olive oil.
3. Pour in a thin layer of your batter and swirl the pan to create a round pancake. Cook on one side for 2 minutes, flip the pancake using the iD3 Solid Turner and repeat. Keep cooking until you’ve used all your batter.
4. Fold your pancakes in half and dollop with the yoghurt and fill with the slices of avocado.
5. Prepare your salad using the Santoku Knife. Serve with your watercress, tomato and cucumber (qukes) salad topped with sunflower seeds. Drizzle the watercress salad with olive oil, and salt & pepper to season.
6. Drizzle your salad and pancakes with chilli oil or hot sauce, and finish with a squeeze of lime.
Optional: to make it an extra hearty meal, top with a fried egg.
